I have tried many different versions of "cheeze" sauce since going plant-based. Most of them have been tasty with only one or two of them getting a thumbs down from me or my guys.
Last week I happened upon one that I hadn't tried. What pulled me in was the fact that it didn't have a gazillion ingredients and it didn't use beans for the base, but oatmeal instead. Oh my goodness - it is SO delicious!! I won't say it tastes like exactly like cheese (because it isn't) but I might say it tastes better! It is definitely my favorite so far!
Oaty Cheeze Recipe
2 cups water
1/2 cup quick cooking oatmeal
1/4 cup nutritional yeast
2 Tbsp cornstarch
2 Tbsp lemon juice
1/2 Tbsp onion powder
1 1/2 tsp salt
1 (4 oz) jar diced pimento
1 pound macaroni (if you want to make Mac and Cheeze)
Preheat oven to 350 degrees. Place all ingredients except macaroni in a blender and process several
minutes until very smooth and well blended. Pour into a saucepan, cook and stir until thickened.
Cook macaroni until just tender. Drain and mix in sauce thoroughly. Bake covered for 30 minutes.
We eat ours over pasta, rice or potatoes. We've eaten it with baked tortilla chips as a cheeze dip. Last week I spread some sauce, that had cooled over night, onto my veggie burger - so good!
